Arabica beans from the small-holder farmers of the North Eastern Ethiopian Djimmah region. Roast lightly, as the natural tang and magic of Mocha would turn bitter if roasted any darker. The â??dry processâ? means that fresh picked red cherries are laid in the sun to dry. Once the skin and flesh are dry and brittle, they are bashed off. The bean, left in its skin during this process, â??maturesâ? and â??soursâ? slightly, developing the amazing winey tang for which real Ethiopian Mocha is famous. GBP1. 52 per 100g.

The Lake Tobu area near the village of Lingtong in Northern Sumatra produces an exceptionally bold 'blue' bean (not green or sandy beige!). The gentle semi-tropical climate helps develop an exceptionally smooth tasting bean without the spiciness of Mocha. We recommend lightly roasting Indian Mysore to obtain a gentle sweetness, but can be roasted medium if preferred. GBP1. 08 per 100g.

SHB stands for Strictly Hard Bean - i. e. grown at over 1,300 metres altitude, where fresher climate slows growth but aids development of intense flavour. This accounts for the 'revolutionary get-up-and-march' flavour, which a good Nicaraguan bean should have. Seriously straight on taste and positive in it definition, it is firm, aromatic and just nutty. Perfect for a French or high roast. GBP1. 4 per 100g.
